Why we like this recipe
This recipe includes a mix of ingredients that can help support a balanced plate:
- Black beans provide fiber and plant-based protein
- Avocado adds healthy fats and a creamy texture
- Tomatoes, peppers, onion, cilantro, and lime bring freshness and color
- Greek yogurt adds a cool, tangy topping with extra protein
It is also a great option for anyone looking for a meatless meal that still feels satisfying.
Ingredients
- 1 ripe fresh avocado, halved, pitted, peeled, and mashed
- 1/2 cup low-sodium canned black beans, rinsed
- 1/2 tablespoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 10 corn tortillas, 6-inch
- 1 cup rainbow cherry tomatoes, chopped
- 1/2 cup red or yellow bell peppers, seeded and diced
- 1 tablespoon fresh jalapeno, seeded and minced
- 1 tablespoon onion, minced
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh cilantro leaves, chopped
- 1/2 cup plain nonfat Greek yogurt
Directions
- Using a fork, mash the avocado and black beans together in a bowl. Stir in the cumin, garlic powder, and salt.
- Spread about 2 tablespoons of the mixture onto each corn tortilla, dividing evenly between all 10 tortillas. Roll tightly to form taquitos.
- Place the taquitos into the air fryer at 400°F for 5 minutes. Turn them over, then cook for 5 more minutes. Depending on your air fryer, you may need to reduce the cooking time to 3 to 4 minutes per side.
- While the taquitos are cooking, combine the cherry tomatoes, bell peppers, jalapeno, onion, cilantro, and lime juice in a small bowl to make fresh pico de gallo.
- Once the taquitos are golden brown and crisp, remove them from the air fryer and top with pico de gallo and Greek yogurt.
