- 3 pounds boneless beef chuck roast
- 1 1/2 teaspoons kosher salt, plus more to taste
- 1 teaspoon ground black pepper
- Olive oil
- 2 large yellow onions, peeled and sliced
- 6 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup red wine, or beef broth as a substitute
- 2 to 3 cups beef broth, plus more as needed
- 2 teaspoons Worcestershire sauce
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 dried bay leaves
- 1 pound baby carrots
- 1 1/2 pounds baby yellow potatoes
- Chopped Italian parsley for garnish, optional
Instructions
- Preheat oven to 300 degrees F.
- Generously season the beef chuck roast on all sides with kosher salt and black pepper.
- Heat about 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Sear the roast on each side until golden brown, about 5 to 6 minutes per side. Remove from the pot and set aside. Do not wipe the Dutch oven clean.
- Reduce heat to medium. Add the sliced onions and sauté for about 3 minutes, scraping the bottom and sides of the pot to loosen the browned bits. If needed, add a few splashes of broth to keep the bits from burning.
- Stir in the minced garlic and cook for another 1 minute, until fragrant.
- Add the red wine, or substitute beef broth, and deglaze the pot for a few seconds. Then add 2 cups of beef broth, Worcestershire sauce, tomato paste, thyme, rosemary, and bay leaves. Stir until combined and bring to a low boil.
- Return the seared roast and any juices back to the pot. The liquid should cover about half of the meat. Add more broth if needed.
- Cover with the lid and bake for 1 hour 30 minutes.
- Remove from oven and add the baby carrots and potatoes. Adjust seasoning with salt and pepper if desired.
- Return to oven with the lid on and cook for 2 hours more, or until the meat is fork tender and the vegetables are soft. For even more tenderness, cook an additional 15 to 30 minutes if needed.
- Garnish with chopped parsley if desired. Serve straight from the Dutch oven or transfer to a large serving platter.
A few helpful tips
For the best flavor, let the roast sear undisturbed until a deep golden crust forms before flipping. That browning step builds a lot of the savory flavor in the final dish.
If you prefer not to cook with wine, beef broth works just fine as a substitute.
